McGill's was started in 1991 in Tulsa, Oklahoma by owners Greg Mcgill and Hal Walker. Their goal was to introduce a restaurant with the elegance of fine dinning, that was slightly relaxed. McGill's has accomplished this by perfecting tasks such as: hand selecting fish to assure premium quality and maximum freshness, squeezing oranges and grapefruits for drinks, and by using bottled Coke®, Schweppes®, Seven-Up®, and Mountain Valley Spring Water® as mixers. McGill's has established a name in Tulsa for having excellence in service with a taste to match.
